GOLDEN SOUP

Description

Slices of pão de ló drizzled with sugar and then covered with egg candy and cinnamon. It has a velvety texture with a smooth consistency and a sweet and aromatic cinnamon flavor.

History

Golden soup is one of the sweets that usually sweetens the Christmas table of many families in Portugal. There are different versions at the regional level, being, at its origin, a convent sweet. It was created in the Convent of Santa Clara in Vila do Conde, one of the convents of the Clarissa sisters, founded in 1318 and extinct in the 19th century. Here, the soup was made with pão de ló, almonds and egg yolks, as well as cider, orange blossom and chila jam. This is the recipe that is at the genesis of all the others. Generally speaking, this recipe includes egg yolks, sugar and pão de ló.

Know-how

Cut the pão de ló into thick slices and dip it in sugar syrup. Place them on a rack to drain and later on a shallow dish. Make a pearl-point sugar syrup and after cooling add the yolks and heat to thicken, until it has the consistency of soft eggs. Finally, pour over the slices of pão de ló and sprinkle with cinnamon.
